Pumpkin is great ingredient both for cake and bread since it has smooth texture, high fiber and great taste. Numerous recipes have been made and combination of pumpkin and chocolate chip within a bread is one we must try. Although we can buy Pumpkin chocolate chip bread in stores, the home made ones will satisfy more and luckily it is not as hard as we thought.
Pumpkin chocolate chip bread combines luscious taste and healthy ingredients we can serve on table whether for breakfast, leisure time or even parties. We can prepare ingredients including ½ cup butter, softened, 1 cup granulated sugar, 2 eggs, 2 cups Gold MedalTM all purpose flour or its equal, 1 cup canned pumpkin or we can use fresh pumpkin if available, 1 tea spoon baking soda, 1 tea spoon ground cinnamon, 1 tea spoon pumpkin pie spice, ¼ cup chopped walnuts, and ½ cup miniature semisweet chocolate chips. All these ingredients are used for bread. Next, we need to prepare ½ cup of powdered sugar and 2 to 3 teaspoon milk or whipping cream for making glaze part. After all ingredients are ready, we can work with following steps.
Firstly, preheat oven to 350 degrees F, grease the bottom part of 0,5 inch loaf pan with cooking or shortening spray. Next, mix together butter, granulated sugar, pumpkin and eggs with wire whisk in a large bowl. Stir in baking soda, flour, cinnamon and pumpkin pie. Stir in walnuts and chocolate chips before spread it in pan.
Bake for 55 to 65 minutes or we can check if a toothpick we insert in the center becomes clean. Cool it for 110 minutes and remove from the pan into cooling rack. Cool completely (maybe 2 hours). Next, stir milk and powdered sugar in small bowl until smooth and thin enough to drizzle. Then, drizzle over loaf, let the glaze set up before slicing. It takes about 30 minutes.
