Chocolate sugar cookies are delicious and easy to decor. There are numerous recipes we can try and following is one of them. First, Prepare ingredients as follow: ¾ cup (172g) unsalted butter, softened to room tempereature, 1 cup (200g0 granualted sugar, 1 large egg, at room temeprature, 1 teaspoon pure vanilla extract, 1 and 1 ½ cups (188 g) all purpose flour, ¾ cup (63 g) non sweet natural cocoa powder (or dutch process), 1 teaspoon baking powder and 1/8 teaspoon salt. For decporating use royal icing or easy icing with meringue powder and assorted sprinkles.
After these ingredients ready we can further to step by step of processing. First beat butter for 1 minute with medium speed of stand mixer fitted with a paddle attachment (put the butter in a large bowl) untilk completely creamy and smooth. Add granulated sugar and beat with medium high speed until fluffy and the color turn to light. Beat in egga and vanilla extract with high speed and scrap down the sides and bottom of the bowl as necessary.
Next sift cocoa powder and flour in a medium bowl. Whisk in salt and bakign powder until evenly combined. With low speed mix the wet ingredients until combined. Next Divide dough into 2 equal parts and roll each portion on a piece parchment to ¼” thickness. Stack the pices onto a baking sheet and refrigerate for at least 1 hour and it should be chilled. We can chill up to 2 days.
Once chilled preheat oven to 350 F and line 2-3 large baking sheet using parchment paper. Remove one doug piece from refrigerator and cut in the shapes. Transfer the cut cookie dough to prepared baking sheet and roll again the remaining dough. Bake for 10 minutes or until cookies apper soft. Ensure to rotate the baking sheet halfway. Allow to cool on baking sheet for about 5 minutes before transfering it to a wire rack to let it cool before icing. \The last stage is making icing and decorating coled cookies as desired.
