To make dark chocolate cake we need to prepare following ingredients: 12 tablespoons unsalted butter, melted plus more for pans, 2 cups all purpose flour plus more for pans, 1 ½ cup sugars, 3/4 cup unsweetened cocoa powder, 1/2 teaspoon salt, 3/4 teaspoon baking soda, 1 1/2 teaspoons baking powder, 1 large whole egg, room temperature, 1 1/3 cups strong, hot coffee, 1 large egg white, room temperature and 1 teaspoon pure vanilla extract.
Next, heat oven to 325 degrees and butter two 8 inch square baking pans. Line with parchment and butter again. Flour pans, tapping out the excess and set aside. Mix all ingredients except hot coffee in bowl of electric mixer fitted with whisk attachment (in low speed until evenly combined). Next add coffee, mix until smooth for about 1 minute before pouring batter into prepared pans; then smooth the tops with an offset spatula.
Bake until toothpick inserted in at the centers comes out clean, it takes about 25 to 30 minutes. Transfer the pans to wire rack to cool it. Turn out the cakes and warp in plastic until ready to use.
