Chocolate Thumbprints cookies are so popular with the way indentation made by thumb in the center. Actually it is luscious cookies where we crush the melted chocolate inside. Chocolate lovers will put this cookies into their lists. Just go to stores or supermarkets, they are almost exist everywhere with various flavors and brands.
However, we can make them at home. Just open the Google and type some keywords. The lists of recipes will appear and it is good idea to pick some of them before deciding where the most workable one. Okay let’s check the recipe below. Perhaps it is the easiest one.
First prepare ingredients including 12 tablespoons (1 1/2 sticks) unsalted butter, 4 ounces semisweet chocolate, chopped, 1 teaspoon pure vanilla extract, 1 1/2 teaspoons light corn syrup, 1 1/4 cups all-purpose flour, 1/2 cup confectioners’ sugar and 1/4 teaspoon salt.
As these ingredients ready we can start the process. First, heat oven to 350 F. Beat 1 stick butter, salt, sugar and vanilla using medium high speed of electric mixer fitted with paddle attachment for about 2 minutes. Then beat in flour starting with low speed and gradually increase to medium high.
Next roll dough into balls by teaspoonfuls and put them 1 inch apart on baking sheet (ungreased). Bake for about 10 minutes then remove from the oven and press thumb for indentations into cookies tops. Return to the oven and bake 7 to 10 minutes more until the cookies turn to be light brown at edges. Afterwards, remove them for cooling into wire rack.
Blend 3 tablespoons butter, chocolate and corn syrup in heat proof bowl. Set over simmering water and stir until they are melted and smooth. Let them slightly cooled. As these cookies become cool, fill the thumbprints with chocolate mixture. Some people like to add more ingredients such as cinnamon, mint or fruit flavors. They are tasty too, but the point is to keep trying until we get our own best recipe.
