Chocolate Pudding Cake Recipe is easy to make and promises moist and rich chocolate cake with silky chocolate pudding sauce. Many people adore when it is served with vanilla ice cream. To make them at home, we need to prepare ingredients including 3 teaspoons baking powder, 2 1/4 cups packed light brown sugar (divided), 1 teaspoon baking soda, 2 1/2 cups all-purpose flour, 1/2 teaspoon salt, 1 cup chocolate chips, 2 ounces unsweetened chocolate, 2 cups buttermilk, 2 tablespoons unsalted butter, 2 1/2 cups boiling water, 1 teaspoon vanilla extract and 1/2 cup plus 2 tablespoons unsweetened cocoa (use Dutch processed cocoa)
As these ingredients ready we can start the process. First, preheat oven to 350 F. Grease 9 x 13 inch baking pan and then set aside. Combine 1 cup of brown sugar, baking powder, baking soda and salt with flour in a large mixing bowl. Whisk the mixture until well mixed. IF any lumps of brown sugar exists, break them with hands. Stir in chocolate chips and set aside.
Next melt chocolate and butter in small saucepan on medium low heat. Heat butter milk with low heat until a bit warmed in different small saucepan. Don’t let them to bubble or boil. Remove from the heat.
Remove the butter and chocolate mixture from heat and stir in the vanilla. Pour the mixture upon dry ingredients, add the buttermilk and stir until well mixed before spread them into the prepared pan. Combine 1 ¼ cups of brown sugar remaining in a small bowl with the cocoa. Whisk until turn to smooth and break any brown sugar clumps with hands. Sprinkle the mixture evenly over the chocolate cake batter. Pour boiling water evenly over the cake.
Next, carefully transfer the pan into the oven. Bake for about 30 to 35 minutes until the center turn to firm as we touch. Remove the cake from oven and let it cool on rack for about 30 minutes before serving. Invert each serving on a plate so the fudge sauce at bottom turns to be topping. It can be served at room temperature/warm, or we can top it with ice cream.
