First we need to prepare ingredients including 1 cup unsweetened cocoa powder, 1/2 cup vegetable oil
2 teaspoons vanilla extract, 1 1/2 cups white granulated sugar, 2 teaspoons baking powder, 4 eggs, 1/2 teaspoon salt, 2 cups all-purpose flour, 1 cup confectioners’ sugar and 1 teaspoon espresso powder (optional)
As these ingredients ready we can start the processing. First, Beat in a bowl of electric mixer fitted with the paddle attachment white sugar, cocoa powder, and vegetable oil. Beat until they are well blended into shinny black dough of sorts. Next add eggs one at a time and add vanilla. Mix for 30 seconds for each addition and as the vanilla added beat in thoroughly.
Whisk in separate bowl baking powder, flour, salt and espresso powder (optional). Next, beat dry ingredients on low speed into chocolate mixture. Don’t overbeat. Then use plastic wrap to cover the dough and chill for four hours or overnight.
Preheat oven to 350 F and line with parchment paper two baking sheets. Place confectioner sugar in a wide bowl. It is where the rolled dough in powdered sugar would be placed. Use rounded teaspoon to get clumps of chilled dough and roll them into 1 inch sized ball using hands. Then roll the balls in confectioner sugar and lie them on the cookie sheets. The last, bake at 350 F for about 10-12 minutes and let them cool a minute on the sheets before moving them to wire rack for complete cooling.
