Chocolate plus raisins creates very luscious taste. It is easy to make. First we need ingredients including ¼ cup of dark chocolate chip (organic one has much better taste), ½ tablespoon of coconut oil (It helps us to coat easily) and about 1,5 cups of raisins.
As these ingredients ready we can start to proceed. First place coconut oil and chocolate chips in a bowl (medium size) for about a minute on high in microwave. Stir well until all clumps disappear. Then take the raisins, ½ cup at a time and stir into the chocolate. Pour the raisin mixture on a large plate lined with parchment paper and spread into a thin layer. Place in freezer until it firm for about 5-10 minutes and break the raisins apart using fingers and serve.
Another recipe is using 3 oz (1/2 cup) of semi sweet chocolate, chopped, ½ table spoon oil (coconut oil is better), and 1 cup plump, moist raisins. Next prepare baking sheet lined with parchment paper and set aside. Place in a microwave safe bowl chopped chocolate and oil and put on microwave until melted, stir after every 30 seconds to prevent overheating.
After the chocolate melted and smooth, add raisins and stir well until all coated with chocolate. Chocolate will be a thin coating over raisins. Scrape the chocolate covered raisins on baking sheet and refrigerate the tray to set chocolate for about 15 minutes. Break any clumps into separate raisins. Store chocolate covered raisins in an airtight container in refrigerator for up to seven days.
