Popcorn always becomes great snack for many occasions ranging from seeing movies at theatre, hanging out with friends, gathering with family to spending your lonely time at bedrooms. It luscious, crispy and available in various flavors. It is one of the most favorite snack to grab and go.
However, we can make it at home. Just try following recipe. First, prepare ingredients including 12 cups of popped popcorn, 3 cups unblanched whole almonds, pecan halves or walnut halves, 1/2 cup butter or margarine, 1 cup packed brown sugar, 1/4 cup light corn syrup, 1/2 teaspoon baking soda, 1/2 cup semisweet chocolate chips, milk chocolate chips or white vanilla baking chips, 1/2 teaspoon salt.
As these ingredients ready following the steps. First, heat oven to 200 F. Remove non popped kernels form the popcorn. Place popcorn and nuts in a large bowl or divide nuts and popcorn between 2 ungreased 13×9-inch pans. Or, we can adjust according to the oven size.
Melt butter over medium heat in 2 quart saucepan. Stir in corn syrup, brown sugar and salt and heat to boiling and stirring occasionally. Continue to cook 5 minutes without stirring then remove from the heat then stir in baking soda until turn to foam.
Pour the sugar mixture to the popcorn mixture and toss until evenly coated. Transfer the mixture to 2 ungreased 13×9-inch pans if we use bowl. Then bake 1 hour, stirring every 15 minutes. Spread on foil paper or parchment paper. Then cool completely for about 30 minutes.
Next place 3 cups popcorn mixture in medium bowl. Melt chocolate chips over low heat in 1-quart sauce pan and stir constantly. Drizzle chocolate over 3 cups popcorn mixture evenly; gently toss to coat popcorn perfectly then spread in single layer of foil or parchment paper. Let the chocolate firm for about 2 hours. Add the chocolate covered popcorn mixture to the remaining mixture; toss gently to combine and store in tightly covered container.
