To make chocolate covered marshmallow cookies prepare following ingredients: 3 cups flour. 1/2 cup sugar, 3/8 teaspoon baking soda, 1/2 teaspoon salt, 3/4 teaspoon baking powder, 1/2 teaspoon ground cinnamon, 12 tablespoons butter, 3 eggs, whisked together, Homemade marshmallows, Chocolate glaze

For Homemade marshmallows: 1/4 cup water, 1/4 cup light corn syrup, 3/4 cup sugar, 1 tablespoon powdered gelatin, 2 tablespoons cold water, 2 egg whites, 1/4 teaspoon pure vanilla extract. mix corn syrup, water and sugar in a saucepan and let the mixture to boil at 235 degrees. Sprinkle gelatin in cold water to dissolve it. Remove syrup from heat and mix with gelatin. Whip the whites to form soft peaks and then pour the syrup into the whites. Add vanilla and keep whipping until stiff. Last, transfer it to pastry bag.

For Chocolate glaze: 12 ounces semisweet chocolate, 2 ounces cocoa butter or vegetable oil. Melts all ingredients at top of double boiler.

As these ingredients ready do following steps. First, blend in a mixer fitted with paddle attachment all dry ingredients. Add the butter and mix until sandy with low speed. Add eggs and mix them all. Form the dough into a disk, wrap and refrigerate for about 1 hour and up to 3 days. As they are ready to bake, grease a cookie sheet or use parchment paper for lining. Then heat the oven to 375 F.

Roll out dough to 1/8 inch thickness on floured surface. Cut out small rounds of dough 1 to 1 ½ inch and transfer to the prepared pan. Bake until the color turns to light golden brown (it may takes 10 minute4s) then cool them at room temperature.

Next pipe marshmallow onto each cookie and place it at room temperature for about 2 hours. Use parchment to line the cookie sheet then one at a time drop the marshmallow topped cookies into hot chocolate. Lift out using fork and let the excess of chocolate drip back into bowl. Place them on prepared pan at room temperature for about 1 to 2 hours or until the coating is firm.
