Muffins made from mixture of chocolate chip and banana create unique taste. The soft texture of banana and its sweetness blend well with the chocolate chip taste. However, picking non sweet or semi sweet chocolate chip is recommended to prevent the muffins to be too sweet. Despite its wide availability at any stores, working the recipe at home would be great.
To make chocolate chip banana muffins prepare ingredients as follow: 1 cup mashed banana, about 2 medium or 1 1/2 large bananas, 1/2 cup butter, 2/3 cup sugar, 1 teaspoon vanilla extract, 1 large egg, 1/8 to 1/4 teaspoon butter rum or coconut flavor, optional, 1/3 cup milk, 1/2 teaspoon baking soda, 1 1/2 teaspoons baking powder, 1/2 teaspoon salt, 1 cup King Arthur Premium 100% Whole Wheat Flour or King Arthur White Whole Wheat Flour, 1 cup King Arthur Unbleached All-Purpose Flour,.3/4 cup chocolate chips, 1 cup chopped walnuts, pre-toasted in a 350°F oven for 8 minutes (if desired), and 1 cup cinnamon chips (optional but strongly recommended).
As these ingredients ready follow the instruction. First, preheat oven to 350F and grease 12 to 14 standard muffin cups (lightly) or as desired by considering the other ingredients we will put in. Beat sugar and butter in a medium sized mixing bowl until smooth. Beat in mashed banana before the eggs, flavorings and milk. Add baking soda, baking powder, flour and salt and then stir to smooth; use higher speed depending of lumps size. Stir walnuts, chocolate chips and cinnamon chips.
Next, heap into muffin cups the thick batter, make them quite full. Then sprinkle the tops of muffins using coarse white sparkling sugar, if wanted. Next bake the muffins for about 20 minutes where the cake tester on the center of muffins comes out clean.
Remove the muffins from the oven and let it cool a bit in the pan; tilting it will prevent the bottom to be soggy. As the pan can be safely handled transfer to the rack for complete cooling.
