Chewy Chocolate Chunk Cookies have so many fans ranging from kids to adults. They are readily available in many stores with various flavors and brands. However, to make them at home is not really difficult. Just find the recipes on Internet and practice it. Following recipe is seemingly easy to try.
First prepare ingredients including 2 and 1/4 cups (280g) all-purpose flour, 1 teaspoon baking soda, 1 and 1/2 teaspoons cornstarch, 1/2 teaspoon salt, 3/4 cup (1.5 sticks or 170g) unsalted butter, melted, 3/4 cup (135g) loosely packed light brown sugar, 1/2 cup (100g) granulated sugar, 1 large egg + 1 egg yolk, at room temperature, 2 teaspoons pure vanilla extract and 1 cup (180g) semi-sweet chocolate chips or chocolate chunks.
Next following step by step of the directions. Fist, whisk in a large bowl baking soda, flour, cornstarch, and salt. Set aside. Whisk melted butter, granulated sugar and brown sugar in a medium bowl until no brown sugar lumps remain. Whisk in the egg and then the egg yolk. Lastly whisk in vanilla extract.
Pour wet ingredients into the dry one and mix using rubber spatula or large spoon. It makes the dough very soft but thick. Then fold in the chocolate chunks and they may not stick well due to melted butter, just try to combine them. Next cover the dough and chill for 3 hours or up to 3 to 4 days in refrigerator (It must be very chilled). After chilling, take out the dough and let it to soften slightly at room temperature for about 10 minutes.
Preheat oven to 325 F and line two large baking sheets using silicone baking mats or parchment paper. Set aside. Roll the dough into ball shapes, use at least 3 tablespoons of dough for each. Roll the cookie dough balls in length wise to ensure the cookies to be thick at baking. Next place 8 balls of dough on each cookie sheet and press few more chunks or chocolate chips at top part (if desired). Then bake the cookies for about 12 minutes. Next, let them cool on the cookie sheet for 10 minutes before moving them to wire rack for complete cooling.
